Remember, when you are collecting dandelions, collect then from clean areas. Avoid the edges of roads, areas that may have been sprayed with pesticides, or used by dogs as a loo. Here’s the recipe, I hope you like it
I'm an Australian, living in Europe. My husband and I divide our time between London and a little house in Segur le Chateau. Segur is a tiny village in south-west France, hidden deep in a valley. The river Auvézère meanders through it and the streets are lined with an array of medieval houses. Its peak in importance and popularity was around 500 hundred years ago. Today however Segur is a sleepy place. Foraging in and around the village is one of my favourite idle pleasures. The woods and hedgerows lining the fields provide foods in every season, and the markets are well stocked with local produce made by small artisans. On these pages I hope to share some of these experiences with readers.
