I cannot say for sure if it is a pesto, a spread or a dip! I would call it a bit of everything because you can easily spread it on a piece of toasted bread and enjoy it with a glass of fresh white wine.
Don't throw those garlic scapes away! They're delicious and make perfect pesto. This simple recipe combines them with herbs (and nuts and cheese, of course!) for even more flavor. And you can freeze any extra, too.
Garlic scapes - the curly part of the garlic that contains the seed (which you don't need) - are up in East Vancouver. Time to dust off my garlic scape pesto recipe and serve it with some pasta, rice or on pizza!
Right now in the Northeast, there is an array of spring/early summer greens-n-things such as choi's, arugula, spinach, turnip & radish tops and things such as green garlic & garlic scapes & bunching onions. Use them all in pesto!
