The May challenge for Charcutepalooza was grinding either Merguez or Chorizo. I chose to do both! The chorizo was fantastic as tacos, topped with 7 month aged cheddar, and an avocado-tomatillo salsa.
For May's Chracutepalooza sausage challenge I made merguez sausage. I came up with this North African Ravioli recipe. It's not a meal you can just throw together quickly, but it's flavor makes up for the time it takes.
