End of season Apricots combined with local honey and ginger make for a beautiful jam - golden and spicy.This recipe is my own, using no-sugar needed pectin to turn down the sweetness and up the ginger and apricot flavours.

Spicy. Sweet. Tangy. Pickled. Oooh, these are so fabulous. This is a bit of an unusual pickling recipe but it delivers an amazingly tangy, sweet and spicy pickled pepper ring that complements any soup, salad, side dish or meat entree.
Although everyone has their own idea of what the perfect marmalade might be, I wanted to create a sort of master marmalade recipe that you could change up at will and still have lovely marmalade...so after lots of testing... by george, it worked!
