The recipe makes a thick, syrupy vinegar - similar to a sweet & sticky balsamic glaze or shrub/'drinking vinegar'. It's an interesting sweet, spicy & savoury addition to so many dishes - from a dash or 2 in a meat marinade to a goats cheese salad.
The pretty flowery onion vinegar is a snap to make (2 ingredients!) & great used as a finish to pan sautéd proteins, greens & veggies. Also works well in salad dressings & dirty martinis with a chive blossom pickle sunk in the bottom of the glass.
A perfect plan when your suddenly massive chive plant needs a haircut. This chive vinegar can be as simple or as fancy as you'd like--plain distilled white, white wine, or champagne vinegar are all great options. The hardest part is waiting 2 weeks!
